Lattepanda as CarPuter -- Powering after car shutdown

I am very interested in using the latte panda in my car, as a media and diagnostic center. However I don't want the lattepanda to suddenly lose power when I switch off the car. How can I trigger a graceful shutdown and do you have any ideas for UPS that could work.
