LattePanda Computer Build

I am building a cheap laptop for impoverished children as apart of a project. The total build price of this laptop should cost around $150. The lattepanda only has 2GB of ram and 32GB of storage. I was wondering if I would have an easier time running PopOS than Windows on this machine. I know there are lighter Linux Distros, but this is the most favorable one.
