LattePanda Mu - Can't boot from M.2 2280 M Key PCIe NVMe?

Using full Carrier board, I can't boot from M.2 2280 M Key PCIe NVMe?. It is a Samsung 960EVO 512GB
I have the standard BIOS on the Mu and I can see and write to the NVMe drive, just can't seem to find a way to boot from it! The DIP Switches are set to: PCIe4X, PCIe4X, Core BIOS and RJ45_2.
Tried installing LattePanda OS Image to NVMe. This works as in writing the image, but then fails to boot. Also tried installing a Windows image directly to NVMe drive using Medicat - Again image writes to drive OK, but then can't see it as a bootable image in the BIOS after disabling the eMMC.
What am I missing??
