Here is a video of the BIOS and the state it is in before and after changing the required setting. It doesn't happen on every boot, so it would be difficult to get a video of the entire thing transitioning from working to not, but this happens about 20% of the time. The only BIOS setting that we have noticed is bad is the one that we update in the video:

I am having this exact same issue. The problem is that when this does happen, you must attach a monitor and keyboard and fix the bios before it will boot again, a huge issue for a board that is intended to be used in a headless robotic context.
I have updated the boot option priorities as in the documentation linked above, but it keeps getting reset
Has anyone found a solution to this problem?
